Today, I’m bringing you the magic of comfort food hassle-free with three of my favorite easy crockpot recipes. Each recipe is simple to put together and results in a hearty and delicious dish sure to please any palate.

3 Easy Crockpot Recipes

Blueberry French Toast

Ingredients

  • 1 loaf French bread, cut into cubes
  • 6 eggs, beaten
  • 2 cups milk
  • 1 cup fresh or frozen blueberries
  • 1/4 cup maple syrup
  • 1 tsp cinnamon (optional)

Instructions

  1. Grease the crockpot with cooking spray and place the cubed French bread inside. In a separate bowl, whisk together beaten eggs, milk, blueberries, and maple syrup. Pour this mixture over the bread cubes in the crockpot, ensuring all the bread is soaked in the liquid. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the French toast is set. Serve with additional maple syrup for that extra sweetness.

Sausage and Peppers

Ingredients

  • 2 package (2 pound) Italian sausage links
  • 2 bell peppers, sliced
  • 1 onion, sliced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon Italian seasoning

Instructions

  1. Place the Italian sausage links in the slow cooker. Add sliced bell peppers and onions. Pour diced tomatoes (with the juice) over the top. Sprinkle Italian seasoning evenly. Cover and cook on low for 6-8 hours or on high for 3-4 hours. Serve this up on buns for a hearty sandwich or over pasta for a delightful dinner.



Creamy Chicken and Rice

Ingredients

  • 8-10 chicken legs or thighs
  • 1 can (10.5 ounces) condensed cream of chicken soup
  • 1 cup water
  • 1 cup long-grain rice
  • 1 packet dry onion soup mix
  • Season chicken to taste with garlic salt and pepper

Instructions

  1. Place the chicken breasts in the slow cooker. In a bowl, mix together cream of chicken soup, water, rice, and dry onion soup mix. Pour the mixture over the chicken. Cover and cook on low for 6-8 hours or on high for 3-4 hours. Serve with steamed vegetables.
